Boil: When using cornstarch to thicken hot liquids, first mix cornstarch with a little cold water, stirring until smooth. Gradually stir into hot liquid; stir constantly until liquid comes to a boil; continue boiling for 1 minute.

Cornstarch is great for thickening gravies, sauces, glazes, soups, stews and casseroles. In fact, it has twice the thickening power of flour so you can use half as much. It also thickens pies and is an essential ingredient for baking.
